Banana – Long Distance Baking

One major perk of the fiancé’s new job is that we both get memberships to the athletic club in town. By now I think you should all know I have a thing for muffins: banana, peach, strawberry, zucchini…Kelly even made chocolate chunk so it’s safe to say she’s on the muffin train too. I love muffins because they are so quick and easy, with hardly any prep or clean up. Plus, you can switch up flavors and mix-in’s making them extremely versatile. Another win! I truly think banana bread is one of the best foods. Not only do I convince myself it’s somewhat healthy when it most definitely is not (come on, the title itself alludes to healthiness) but there is nothing like the smell of banana bread baking in the oven. Tis the season for zucchini! I’ve already started seeing coworkers leaving their extras in the break room at work. I’m slightly ashamed to say though, I have no homegrown zucchini this year 🙁 I got the “grey bugs of death” on my plants and there was no saving them. I love breakfast just as much as the next person, maybe even more. Give me some eggs, toast and hash browns and I’m good to go. And there has to be hash browns. I really don’t love cooking breakfast though, especially not for just one person. It makes such a mess! There’s a pan for the eggs, the cutting board for veggies, the cookie sheet for hash browns…ok maybe it really isn’t that many dishes.
