Once I finally made my own homemade granola and saw how easy and delicious it was…I knew there was no going back. I’ve had ideas in my head for all different kinds of mix ins and variations of granola, just waiting to finish up each batch so I can make some more. Can you be obsessed with granola? Maybe. I’ve wanted to make homemade granola forever. When I told the BF I was making some, his exact words were “you’ve said you’re going to make that forever”. Clearly I talk things up then never follow through. This cinnamon raisin granola reminds me of my freshman year in college. By now I think you should all know I have a thing for muffins: banana, peach, strawberry, zucchini…Kelly even made chocolate chunk so it’s safe to say she’s on the muffin train too. I love muffins because they are so quick and easy, with hardly any prep or clean up. Plus, you can switch up flavors and mix-in’s making them extremely versatile. Another win! I love breakfast. It just might be my favorite meal of the day! With dessert a close second. Very rarely though do I actually make breakfast though. It’s usually always something quick that I’m shoving in my mouth in the car rushing to get to work on time. Super classy and grown up, I know. I love 3 day weekends. I think every weekend should be a 3 day weekend and that working hours were 10-2 instead of 9-5. What a great schedule, don’t you think? Ok, so maybe that is not realistic but it sure is nice when these 3 day weekends pop up and this past weekend was no exception. One of my favorite breakfast foods, really anytime foods, is a frozen waffle with peanut butter. Steph and I have even bonded over our shared love of peanut butter waffles- seriously the best! I could eat them every day and not just for breakfast. I have, on occasion, brought a frozen waffle and peanut butter to work with me and eaten it for lunch. Some say I’m a picky eater (don’t listen to them…I’m infinitely better than I was as a child). However one thing I’m still picky about: Bananas. They have one little bruise? Done. Start turning slightly brown? Nope. I just can’t do it! I also can’t bear to throw them away, so I end up with a freezer full of brown bananas.
