Easter – Long Distance Baking

To me, carrot cake is the epitome of spring time. It’s light and fresh after a winter of rich heavy foods. It reminds me of a bright sunny day, which is exactly what I want following all the rain we’ve been having. Growing up my family didn’t have many Easter traditions. We did the usual go to church, maybe go to the zoo when we were little, but no big huge dinner or anything. Now that I’m not living at home I haven’t adopted any of my own traditions yet either. Unless you count working… (no holidays in a hospital!) Well I’m still in an Easter dessert baking mood and partly because I found these really cute cupcake liners and toppers at Hobby Lobby. I love perusing Hobby Lobby, especially for baking supplies. However, they put away holiday stuff too soon!
