To me, carrot cake is the epitome of spring time. It’s light and fresh after a winter of rich heavy foods. I’ve wanted to make homemade granola forever. When I told the BF I was making some, his exact words were “you’ve said you’re going to make that forever”. Clearly I talk things up then never follow through. This cinnamon raisin granola reminds me of my freshman year in college. By now I think you should all know I have a thing for muffins: banana, peach, strawberry, zucchini…Kelly even made chocolate chunk so it’s safe to say she’s on the muffin train too. I love muffins because they are so quick and easy, with hardly any prep or clean up. Plus, you can switch up flavors and mix-in’s making them extremely versatile. Another win!
